With Cacao nibs, cocoa and nuts, these would be the BEST Nutty Chocolate Fudge Brownies you’ve ever had!
True love of chocolate cake is what got me started on baking, but I’ve always found brownies to be extremely fascinating. They taste almost as delicious as a perfectly frosted cake, but take just a fraction of the time and effort. There’s no sifting flour, no eggs that need to be whipped into a frenzy, in fact even hand-held whisks are optional, and most days I just use a mini spatula to bring everything together! But at the end of it all, you get a rich, decadent slice that is nothing short of perfection!
My search for the perfect brownie ended when I found these – while watching Donna Hay’s cooking show ‘Fast Fresh and Simple’ on TLC. Ever since that day, these are the only brownies I’ve made, and nothing else seems to be good enough!
And if I told you how simple they are, you would think I’m crazy or lying. And the clean-up is a joke!
I use a heat-proof pan to weigh the ingredients (butter, sugar and cocoa) on a kitchen scale – then transfer the same pan to the stove for the butter and sugar to melt into a creamy, smooth, chocolaty emulsion.
Once it’s had some time to cool down, crack open the eggs and stir until it resembles a runny batter. Weigh the flour on a piece of foil (and use the same foil to line the cake tin!) and tip it into the batter along with some vanilla and a splash of coffee! The coffee and vanilla act as an accent to the chocolate, the way a gorgeous frame showcases a work of art.
Transfer the batter to the cake tin (lined with foil), sprinkle nuts and bake! Unwrap foil, as the Chocolate Fudge Brownies cools. Wipe down the cake tin (you don’t even have to wash it) and you’re done!

I’ve made these Chocolate Fudge Brownies countless times and no one’s ever stopped with just one slice – it’s that good!!!! 🙂 Be it a bake sale or just a ‘howdy new neighbor’ sorta thing, these brownies will get the job done!!!
Just make sure you use the best cocoa you can get your hands on – I save the Hershey’s Specialty Dark Cocoa for these. And switch up the nuts topping each time, so you end up with a different kinda brownie each time – I usually shuffle between chocolate chips, walnuts, Pecan, Hazelnuts and Cacao nibs, using two of each for every bake!

Just remember, brownies without eggs will be ‘too fudgy’.
