Zucchini fries (baked, not fried)! yaay!

I have recently fallen in love with zucchini and cannot find enough ways to include it in my diet. My favourite way to eat zucchinis are in the form of these Baked Zucchini Fries. Crispy, flavourful and baked. Anything not fried is a win in my book!

Zucchini or a courgette is a curious vegetable. It’s a member of the squash family, and although we treat it as a vegetable, it actually is a fruit. Tomay-to, To-mah-to, right? High in vitamins and minerals and low in carbs, it is perfect for those who are conscious of what they eat. And also for those of us who just want something yummy! There’s so much you can do with zucchini – breads, muffins, stuff and bake them, stir fries, salads, even chips! Today, we are gonna see if we can swap them up for those indulgent yet purely sinful french fries!

That’s right! Zucchini fries! No oil, (mmm well…. maybe just a dab), baked, and the potential to be frozen for later use.

Making these are so simple! This is a perfect project that you could give your children. Set all the ingredients in front of them and have them dip and roll the zucchinis into the batter and crumbs. I am sure that they would love the messiness too, and it’s a great way to include your children into the cooking process!

I love serving these as an appetizer or a crisp side to this gorgeous Veggie Pasta Bake. In contrast to the soft, spicy pasta, these crisp, sweet zucchini fries are absolutely delectable!

Baked Zucchini Fries

Baked_Zucchini_Fries

  • Prep Time:20m
  • Cook Time:30m
  • Total Time:50m
  • Serves: 4
  • Yield: About 4 cups

Ingredients

  • 3 medium sized Zucchinis, cut into 1 inch strips. Do not peel.
  • 1/2 c All-purpose flour
  • 2 -3 cups Breadcrumbs (I use Garlic & Herb)
  • 2 tsp. Red Chilli powder/paprika
  • a pinch of ground Turmeric
  • 1 tsp. Garlic powder
  • 1/2 tsp. dried Italian seasoning
  • 1/2 tsp. ground black Pepper
  • 1/3 c Cornflour + water to dissolve the cornflour into a light, dippable paste
  • 2 -3 tbsp Parmesan cheese, grated (optional)
  • Salt to taste
  • Oil spray / oil to brush (optional)

Instructions

  1. Preheat the oven to 425°F/ 225°C. Line a large baking sheet with baking paper/foil. Position the oven baking rack to the lower-middle position.
  2. Toss the zucchini strips with all-purpose flour. Set aside.
  3. In a bowl, dissolve cornflour and water to make a slurry. In another bowl, combine breadcrumbs, red chilli powder, ground turmeric , garlic powder, italian seasoning, ground pepper and salt.
  4. Roll the floured zucchini strips into the breadcrumbs(1). Then dip in cornflour water. Then roll in breadcrumbs(2). Then dip in cornflour water. Back into the breadcrumbs(3). Lay on the prepared baking sheet. Repeat for all the strips.
  5. Lightly spray or brush with oil. This is optional, but the oil makes it taste a little better. Sprinkle with the grated parmesan.
  6. Bake at 425°F/ 225°C for 20mins. Flip all the fries in the pan, then continue baking for another 5-10 minutes or until lightly browned and crisp. Cool on a wire rack for 2-3 minutes before serving. Best eaten hot.
