Garlic Chilli Cheese Toast

My best friend loves these things they serve at Cafe Coffee Day, and for years she’s been asking me to make them for her. I’ve never had them, but I scouted for recipes, and put this together. She was visiting us for two weeks last month, and I made these the day she left back for India. She loved it, and so did my husband, and  I’ve made them 3 times since and if I may say so myself, it is pretty freaking awesome! Super quick, and super yummy breakfast in absolutely no time, with so few ingredients. Now, that’s a win in my book

Garlic Chilli Cheese Toast

  • Serves: 2
  • Yield: 4 slices of toast

Ingredients

  • 1 tbsp. butter, softened
  • 3 cloves of garlic, grated
  • 4 slices od bread
  • 1 1/2 c shredded cheese
  • 4 c slice of capsicum (bell peppers), diced
  • 3 jalapenos, sliced
  • Salt and pepper, to taste
  • 1/2 tsp. italian seasoning
  • 1/2 tsp. red pepper flakes (optional)

Instructions

  1. Mix butter and grated garlic together. Spread over one side of the bread slices.
  2. In a bowl, mix together the shredded cheese, diced bell peppers, jalapenos and all the seasonings.
  3. Place the bread, buttered-side down on a medium hot skillet.
  4. Pile the cheese mixture on the bread and toast on low-medium heat until bottom is golden brown and cheese is completely melted.
  5. Serve hot.
