Almond Crusted Flavoured Paneer

It was a feast fit for a Maharaja!

Almond crusted saffron flavoured paneer, caramelised onion pulao with blended cashew and paneer curry.

It was so rich, too rich, that I vowed not to make it again for another year. But I’m not really great with stay-away-from-food promises, and I’m sure I’ll be making these the next time we have dinner guests. Well, maybe not the whole shabang! But definitely the Almond Crusted Paneer – now that was gold, by itself!

If you haven’t tried making paneer at home, this flavoured paneer might give you cause to make them immediately. It is custom-built with your favourite flavours! This particular version has dry red chilli flakes, chopped cilantro and saffron.

And then all that’s left to do, is dredge it in flour and almonds and fry it!

The final result is a crisp, nutty exterior, that gives way to a creamy, soft, saffron-y interior that just crumbles and melts with every bite. Now who wouldn’t love that!!

Almond Crusted Flavoured Paneer

  • Serves: 2
  • Yield: About 12 cubes / 2 discs

Ingredients

  • 170 g Flavoured Paneer
  • 1/4 c almonds, coarsely powdered
  • 1 tbsp. cornflour
  • 4 tbsp. tbsp flour
  • 1/2 c water
  • Salt to taste
  • Oil to shallow fry

Instructions

  1. Cut the paneer into cubes or use cookie cutters to cut out any shape you like.
  2. Mix together coarsely powdered almonds, cornflour and salt in a plate.
  3. Place the water and flour in two separate bowls.
  4. Take the paneer, dip it in water, then in flour, then water and back in flour again.
  5. Dip it in water again, then roll in the almonds. Press down to ensure tight packing of the almond crust.
  6. Repeat with all the pieces.
  7. In a small pan, heat a small layer of oil, and fry the almond coated paneer over medium heat until golden brown on all sides.
  8. Drain over paper towels, and serve hot!
