Masala Omelette Sliders

I had somewhat of a complicated childhood – I chose to go to a school that was about 10km (~6 miles) from my home, which meant I was picked up by the school van at 6:45 a.m. every morning from 3rd grade, way earlier than most other kids my age. So every morning was a rushed morning, but my mother got us through every day – lunch packed & breakfast fed.

I still remember how most days she’d feed me breakfast as I was running out the door, sometimes even when I was bent down tying my shoelaces, her hand would find a way to force a final mouthful of food.

One of those morning breakfasts was this Masala Omelette Slider. As simple as it sounds (just an omelette sandwiched between a bun), the way she made it, served warm straight out of the pan, it was the most flavorful of her breakfasts.

I used these Homemade Slider buns (Pav buns) made with 2% milk and olive oil. You can get the ones from the store, but there’s something so satisfying about homemade bread!

We always make our Masala Omelette with eggs, onion, jalapenos (substitute with any pepper of your choice), turmeric powder, red chilli powder, salt and pepper to taste. It is so much more flavorful, with a lot more texture and intrigue.

Once the Masala Omelette is ready, use the same pan to toast the slider bun halves, till golden brown and crunchy. This way, some of the juices and flavors from the Omelette will soak into the bread. Yumm!

Place all the bottom halves of the buns on the Omelette and use it as a template to cut out slices of the omelette. Sandwich with the toasted top half and enjoy immediately.

My mother used to make us these Masala Omelette Sliders for breakfast - simple, fast and absolutely delicious!

  • Prep Time:5m
  • Cook Time:10m
  • Total Time:15m
  • Serves: 4
  • Yield: 8 sliders

Ingredients

  • 3 eggs
  • 1 c chopped onion
  • 1 jalapeno, chopped (about 1/4 c)
  • 1/3 c cilantro chopped
  • 1/2 tsp. red chilli powder
  • 1/2 tsp. turmeric powder
  • 1/4 tsp. black pepper powder
  • 1/2 tsp. salt
  • 2 tbsp. oil
  • 8 slider buns

Instructions

  1. In a medium mixing bowl, whisk the egg until frothy and thick. Then stir in the chopped onion, jalapeno, cilantro and spices.
  2. Heat oil in a pan at least 9 inches wide and once hot, add in the batter. Reduce heat to medium, cover and cook until the top is set and the bottom is golden brown, then flip carefully.
  3. Continue to cook the bottom until it's golden brown and transfer the omelette to a plate.
  4. Slice the slider buns in half with a serrated knife.
  5. In the same pan, on medium heat, sear the slider halves until golden brown.
  6. Using the bottom halves of the slider as template, cut out pieces of the omelette, and sandwich each piece between a slider.
  7. Serve warm!

These omelette sounds so flavourful. It’s such a refreshing change from the everyday normal eggs and it’s on-the-go friendly too! Yay!

What wonderful memories of your mom’s cooking. These sliders have a wealth of wonderful flavors that I can’t wait to try. You’re combining a number of my favorite ingredients here: especially the cilantro and turmeric!

This sounds amazing to me, Tina! Like the Indian version of an Egg McMuffin — and with a whole lot more flavor. You’re lucky to have had a Mom prepping breakfast for you — I was a cold cereal kid.
