My mother used to make us these Masala Omelette Sliders for breakfast – simple, fast and absolutely delicious!
I had somewhat of a complicated childhood – I chose to go to a school that was about 10km (~6 miles) from my home, which meant I was picked up by the school van at 6:45 a.m. every morning from 3rd grade, way earlier than most other kids my age. So every morning was a rushed morning, but my mother got us through every day – lunch packed & breakfast fed.
I still remember how most days she’d feed me breakfast as I was running out the door, sometimes even when I was bent down tying my shoelaces, her hand would find a way to force a final mouthful of food.
One of those morning breakfasts was this Masala Omelette Slider. As simple as it sounds (just an omelette sandwiched between a bun), the way she made it, served warm straight out of the pan, it was the most flavorful of her breakfasts.
I used these Homemade Slider buns (Pav buns) made with 2% milk and olive oil. You can get the ones from the store, but there’s something so satisfying about homemade bread!
We always make our Masala Omelette with eggs, onion, jalapenos (substitute with any pepper of your choice), turmeric powder, red chilli powder, salt and pepper to taste. It is so much more flavorful, with a lot more texture and intrigue.
Once the Masala Omelette is ready, use the same pan to toast the slider bun halves, till golden brown and crunchy. This way, some of the juices and flavors from the Omelette will soak into the bread. Yumm!
Place all the bottom halves of the buns on the Omelette and use it as a template to cut out slices of the omelette. Sandwich with the toasted top half and enjoy immediately.
