You all know the real struggle I’ve been having with non-dairy milks in my morning coffee. The thickeners in store-bought non-dairy milks create a distinct variance in the texture of the coffee, and no one, and I mean no one, messes with my coffee. Pressing nut milks from scratch isn’t really a walk in the park, because of the multiple rounds of grinding, pressing and repeat, not to mention the fact that there is a real risk of faster spoilage since hands were used to press out the milk.

So when I discovered The NutraMilk, it seemed like an answer to my Vegan dreams! One machine, equipped to grind, press, strain and deliver just the finished product, mess-free and with absolute speed is one that I never imagined possible. I was on the verge of giving up my Vegan goals for the year and just call myself a ‘reducetarian’ instead. The NutraMilk dragged me right back onto my predetermined path.

I absolutely love how it makes large quantities in one batch (upto 2L of alternative milk and 3c of alternative butter) so I don’t have to extract every other day. And no hands (almost)!!! No more blend -> strain -> squeeze -> repeat.

And guess what? I can now enjoy my properly textured dairy-free coffee every morning! To say that I am exultant is a gross understatement!

Now that I had my coffee problems resolved, I looked around for the next big problem: tea. My mom once made tea on a particularly stormy evening with coconut milk and it was a huge hit! Of course, I was knocked out for a nap soon afterwards (am I the only one with drowsy after-effects to coconut milk?), but that was a tea I never forgot.

But I hadn’t tried to make dairy-free tea since then, but this seemed like a perfect time to bring back an old favorite. So with the first batch of coconut milk extracted from The NutraMilk, I set to recreating the beverage from memory with one tiny change. This would be a VEGAN Vanilla Masala Chai instead.

Steeping this tea is a very zen process. You first bring the water to a gentle simmer before adding the whole spices: Cinnamon, ginger and cardamom. Sometimes, I even throw in a star anise for a fragrant twist. Once the water comes to a boil, reduce heat back to a slow simmer and add the black tea. Let it steep for a few minutes, allowing the flavors to mingle and mate.

Strain the tea into a warmed glass and finally, the piece-de-resistance, dribble in the coconut milk to taste. Sweetened with coconut sugar and sipped on a cold winter’s day, the joy and the comfort that this tea can bring is unparalleled.

Vegan Masala Vanilla Chai

Vegan Masala Vanilla Chai made with freshly homemade Coconut milk, whole spices like cinnamon, cardamom, ginger & flavored with vanilla.

  • Yield: About 3 cups

Ingredients

For the coconut milk

  • 2 c unsweetened desiccated coconut
  • 4 c water

For the Tea

  • 2 c water
  • 1 tbsp. loose leaf black tea
  • 1 cinnamon stick (about 3 inches)
  • 4 cardamom pods, crushed
  • 1 inch fresh ginger, chopped
  • 1/2 tsp. vanilla extract
  • Coconut milk, to taste
  • Sugar, to taste

Instructions

Make the coconut milk

  1. Assemble the NutraMilk container (blade, wipers, inner compartment) and lock everything in place. Add the unsweetened dessicated coconut and press 'butter' for one minute. Add water, one cup at a time and press 'butter' for 1 minute between each addition.
  2. Once you've added all the water, press 'mix', then 'start' and let it run for the preset amount of time on that setting.
  3. Once mixed, press 'dispense', then 'start' and flip open the tap. Make sure you have a container to collect the pressed coconut milk with a light mesh strainer to catch any tiny particles of coconut.
  4. Transfer the coconut milk to a clean, sterile glass container and refrigerate for upto 5 days.

Make the tea

  1. Combine water, cinnamon, cardamom and ginger in a small saucepan and bring to a boil. Once the water is boiling, add the tea leaves and reduce heat to a simmer.
  2. After the tea has steeped for 5 minutes, remove from heat and stir in the vanilla. Add the freshly pressed coconut milk (or any other nut milk of choice) and sugar to taste. Serve hot!

    I love chai, and although I am not VEGAN, I can see how the flavours of the coconut milk would go well with this. I will have to give it a try with regular good old “dairy milk”.

    This sounds delicious! I love chai flavors in just about anything, but a hot drink is my favorite. I’m drooling now, but I’m not sure if it is because of the recipe, or that incredible machine!
