If you’ve known me long enough, you’d know that one of my biggest struggles in life, is breakfast. Time and time again, ‘eating breakfast everyday’ has featured on my New Year’s resolutions and unfailingly, I’ve failed to keep it going for more than a week, tops! I blame the coffee (and so does my husband!). I take forever to painstakingly brew my first cup that I loose interest in much else by the time the cup is brewed. But repeated experiments and careful tabulation of the results have shown that when bread is involved, I eat more breakfasts. I buy/bake a loaf, and make sure I finish it before it goes bad, one way or another. I think this unusual follow-through stems from my innate love of yeast-risen things, and the fact that a simple slice is delicious, whether eaten unceremoniously plain with just a smattering of jam and/or peanut butter, slathered in vegan butter and toasted sinfully crisp with caramelized bananas or painstakingly made into a savory breakfast pizza. No matter how, bread is life made sustenance, and I have a strange reverence towards it.
While refinement is a quality that’s highly admired and expected of people, when it comes to food, being ‘refined’ bodes ill. In today’s highly evolved society that wants it all and must have it all, we want fast foods that are also organic, whole grain and nutritious and if it’s not much trouble, have a touch of fairy dust sprinkled on them too. The pristine white bread that was celebrated just a few generations ago as a wondrous marvel has now fallen out of grace.
And so, for a long time, I kept my obsession with bread in the morning a secret and a shame (especially from those eating gourmet smoothie bowls with licks of sunshine and stardust), but not anymore; not since I replaced my regular store-bought run-of-the-mill bread with Dave’s Killer Bread made with 21 grains and seeds. Honestly, reading through the ingredient list vaguely reminded me of the wild bird feed I bought for my bird feeder, which must mean that it’s wholesome and nutritious. Did I also mention that it’s all USDA ORGANIC, Whole grain and Non-GMO project verified? I wouldn’t be surprised if they find traces of fairy dust on this one either.
Normally, something that comes with the keywords ‘whole’ and ‘organic’ tend to rank low on the normal human scale of deliciousness, because it’s a real case of cake vs carrots. They’re both great, but only one is good for you while the other is the more delicious of the two. But, and this is a big ‘but’, this weird one-of-a-kind bread out there was an exception. It was brown, hit all the keywords, yet tasted absolutely delicious! It tastes great just slathered with jam, or toasted with caramelized bananas in the center or made into a breakfast pizza.
I’m a savory breakfast girl – unless there’s chocolate or caramelized bananas on offer, in which case, I’ll take both the savory and the sweet – see what I mean? So obviously I decided to make these BAKED Savory Toast Roll-ups. Did you hear me saying ‘Baked’? Now here’s the twist. There’s veggies in there too! Sweet Potato, Kale, Spinach, Carrots and what not. I threw in some turmeric, ginger, onions and bell peppers too! All of this is wrapped in a delicious 21 grain and seed coated bread with 5g protein, 5g fiber, 250mg Omega-3, and 22g whole grains per slice that bakes to an amazing crisp perfection and stays crisp for HOURS after baking!
Talk about sneaky!
My husband is a breakfast hobbit of sorts, but I’ve never quite joined him for breakfast in the morning, but now, I decided to throw us a little breakfast spread to celebrate.
I had the filling made the night before, and if you’re not up for much work the morning after, fashion the rolls too, then promptly cover with a cloth and refrigerate in an air-tight container. On the morning of, if you’re like me and enjoy that painstakingly crafted cup of coffee, transfer the pre-fashioned Toast roll-ups onto a baking sheet, brush generously with coconut milk and a touch of oil/vegan butter and shove it into the oven to bake.
I took the lazy route, of course and while the Savory Toast Roll-ups were crisping up in the oven, my husband and I shuffled all the fixings to this cozy table set up in our garden. The air outside was crisp yet divinely cool, and the sun was just coming up and throwing patches of warmth here and there. The garden was in full bloom and I couldn’t resist snipping off a few blooms and greens to create a make-shift vase. If you thought my husband (who always sees me rival grumpy cat in the morning) was surprised, think again – I think I surprised myself more with my new shade of morning-ness.
All that was left was to shuffle the warm and Baked Toast Roll-ups and a plethora of other things that a breakfast spread just can’t do without – coffee (duh!), fruits, jam, a divine vegan sauce (made with cashew yogurt, sriracha and garlic) that goes great with the roll-ups, iced tea and dairy+non-dairy milks.
The word ‘blissful’ doesn’t even begin to cover the serenity of this morning. I’m thinking of making this table setup a permanent fixture in the garden, what do you think?
After sitting down to breakfast together – something we haven’t done since our honeymoon, I think – we whiled away the morning in pointless chit chat till the sun climbed up and chased us out of our sweet spot. With the nutritious, delicious breakfast to energize us, we then moved on to mundane chores, like clearing out the food and then a little bit of gardening. I finally planted out some saplings that were germinating in the laundry room sink since March while my husband mowed the lawn.
