Ingredients
For the rice
- 1 c Basmati rice
- 1 3/4 c water + more for soaking
- 6 cloves
- 2 green cardamom pods
- 1 bay leaf
- 1 star anise
- 1 small stick of cinnamon
- Salt, to taste
Final tempering
- 1/2 c frozen green peas
- 1/2 c frozen corn kernels
- 1/4 c onion, sliced
- 2 -3 cubes of vegan garlic scape butter
- 1 tsp. vegetable oil
Instructions
- Wash and soak the Basmati rice in water for 15 minutes.
- Cook the rice (however you normally would) along with the spices and salt until soft but still firm.
- Remove from heat and spread out in a shallow bowl to cool slightly.
- In the meantime, melt the butter along with the oil in a small pan over medium heat. Toss in the peas, corn and sliced onions. Sauté till the peas and corn are plump and soft and the onions are translucent.
- Add the vegetables to the cooked rice, toss together to distribute evenly and serve hot with a side of your favorite curry or vegetables.
