Corn and Peas Pulao

  • Yield: About 2-3 cups

Ingredients

For the rice

  • 1 c Basmati rice
  • 1 3/4 c water + more for soaking
  • 6 cloves
  • 2 green cardamom pods
  • 1 bay leaf
  • 1 star anise
  • 1 small stick of cinnamon
  • Salt, to taste

Final tempering

  • 1/2 c frozen green peas
  • 1/2 c frozen corn kernels
  • 1/4 c onion, sliced
  • 2 -3 cubes of vegan garlic scape butter
  • 1 tsp. vegetable oil

Instructions

  1. Wash and soak the Basmati rice in water for 15 minutes.
  2. Cook the rice (however you normally would) along with the spices and salt until soft but still firm.
  3. Remove from heat and spread out in a shallow bowl to cool slightly.
  4. In the meantime, melt the butter along with the oil in a small pan over medium heat. Toss in the peas, corn and sliced onions. Sauté till the peas and corn are plump and soft and the onions are translucent.
  5. Add the vegetables to the cooked rice, toss together to distribute evenly and serve hot with a side of your favorite curry or vegetables.
