Ingredients
- 3 eggs
- 1 c chopped onion
- 1 jalapeno, chopped (about 1/4 c)
- 1/3 c cilantro chopped
- 1/2 tsp. red chilli powder
- 1/2 tsp. turmeric powder
- 1/4 tsp. black pepper powder
- 1/2 tsp. salt
- 2 tbsp. oil
- 8 slider buns
Instructions
- In a medium mixing bowl, whisk the egg until frothy and thick. Then stir in the chopped onion, jalapeno, cilantro and spices.
- Heat oil in a pan at least 9 inches wide and once hot, add in the batter. Reduce heat to medium, cover and cook until the top is set and the bottom is golden brown, then flip carefully.
- Continue to cook the bottom until it's golden brown and transfer the omelette to a plate.
- Slice the slider buns in half with a serrated knife.
- In the same pan, on medium heat, sear the slider halves until golden brown.
- Using the bottom halves of the slider as template, cut out pieces of the omelette, and sandwich each piece between a slider.
- Serve warm!
