Ingredients
- 2 c vermicelli (super fine)
- 1 c water
- 2 tsp. oil
- 1/2 tsp. cumin seeds
- 1/2 c onion, chopped
- 1 tsp. ginger, grated
- 3 -4 green chillies (sliced through without splitting it)
- 3 -4 curry leaves
- 1/4 tsp. turmeric powder
- 1/2 tsp. red chilli powder
- 1 egg
- Salt, to taste
- 1 spring onion (green)
Instructions
- Heat oil in a pan and add cumin. Once it turns fragrant, add onion, ginger, green chillies and curry leaves. Add a pinch of salt and sauté until the onions are soft.
- Add in turmeric and red chilli powder. Once the spices are cooked, add the egg.
- Scramble the egg into bite sized bits, stir in the vermicelli and add water and salt.
- Cover and let cook on medium-low heat for about 5 minutes or until soft.
- Adjust seasoning, if nccessary. Top with the spring onion greens and serve hot!
