Ingredients
- 480 g (1 packet) Fresh Nama Yakisoba Noodles w/ flavor packets
- 4 tbsp. chilli garlic oil (or vegetable oil)
- 2 cloves of garlic, minced
- 130 g onions, sliced
- 100 g bell peppers (assorted colors), sliced
- 100 g zucchini, cut in 1/2 inch slices
- 140 g cabbage, sliced finely
- 70 g carrots, sliced finely
- 1 -2 spring onions, sliced (white and green parts separated)
- 75 g tofu, pressed and pan-fried
- Salt and Pepper, to taste
Instructions
- Heat 2 tbsp oil in a large wok. Once hot, add the minced garlic and fry till golden.
- Add the sliced onions, spring onion (white) and peppers and sauté on high heat till soft. Then add the remaining vegetables (zucchini, cabbage, carrots) and toss on high heat for 2-3 minutes till cooked but still crunchy. Transfer to a plate and spread out.
- In the same wok, heat the remaining 2 tbsp oil and break up the noodles (without crumbling it too much) and saute for a minute, then add the sauteed vegetables and the flavor packet and toss till combined. Add salt and pepper to taste.
- Garnish with spring onion greens and toasted tofu slices and serve hot!
