Ingredients Method

Ingredients
  

  • 0.75 cup onion, chopped
  • 2 -3 green chillis, de-seeded, finely chopped
  • 1 tbsp ginger, grated
  • 0.75 cup carrots, grated
  • 0.5 medium beetroot, cooked, grated
  • 3 medium potatoes, cooked, smashed
  • 0.5 cup peas, cooked, smashed
  • 2 -3 tbsp fresh coriander, chopped
  • 0.5 tsp red chilli powder
  • 0.5 tsp cumin powder
  • 1 tsp garam masala
  • 0.25 tsp cumin seeds
  • Salt to taste
  • 0.25 cup breadcrumbs + 1/2 cup breadcrumbs
  • 2 tbsp oil+ Oil spray/brush

Method
 

  1. In a medium pan, heat 2 tbsp oil over medium heat.
  2. Fry the onions with a pinch of salt until translucent. Stir in the chopped green chillis and ginger.
  3. Stir in the grated carrots and cook for a minute. Make sure all the water is evaporated.
  4. Add the beetroot, potatoes, peas and flavouring spices.
  5. Turn off heat and let cool completely.
  6. Stir in the chopped coriander and breadcrumbs until you get a stiff mix, ready to be rolled.
  7. Divide the vegetable mix into 8 balls.
  8. Using a small piece of clingfilm, shape each ball into a sausage, rolling with the help of the clingfilm. Wrap in the same clingfilm to store/freeze until ready to fry.
  9. Roll each sausage in breadcrumbs and set aside.
  10. Spray or lightly brush oil in a pan.
  11. Place the sausages (2-3 in a medium pan) and fry them over medium-low heat until properly browned on all sides.
  12. Repeat until all the sausages are cooked.
  13. Place inside a hot dog bun, with maybe a few slices of cucumber and onions, a squeeze of mayo and/ketchup and serve hot.
