Nobody loves Semiya (Vermicelli) as much as I do. Seriously, so many people have freaked out about the amount of Vermicelli I consume in a month! Anytime that I have to cook just for myself, I go straight to this Stir-fried One pan Egg Semiya. I don’t even think about other things, just head straight to this. No detour whatsoever!
Although I do enjoy regular vermicelli, I am partial to this this super fine, thin kind (ahem! Anil Semiya is my favourite). I cannot imagine a pantry without this, and when I run out of these, I get weird withdrawal symptoms until I replace them.
And look at this ingredients list! How little chopping is that??? I’ve been making these for as long as I can remember – in fact I used to stir-fry any left over string hoppers (idiyappam) into these even as a kid.
Heat some oil and temper the cumin seeds. Sauté the onions, ginger, chillies and curry leaves. Don’t freak out about the green chillies – I’ve just scored them on the side, so not much heat gets out. It just adds a nice flavour. I also add a little turmeric and red chilli powder, because the turmeric is a great antiseptic to fight any salmonella the egg might have. And I would add red chilli powder in my coffee if I could!
Scramble the eggs, but I like to keep it chunky. I just love biting into the egg as I eat, it’s a delightful change in texture!
Add the vermicelli and water, cover and cook until soft! That’s it!
Transfer to a bowl, and enjoy the no-hassle meal you just made for yourself. Delicious solitude awaits your pleasure – breakfast, lunch or dinner!
