Simple VEGAN Stir-fried Vegetables

This Simple Stir-fried Vegetables has saved me on more than one rushed day! Very simple, full of flavour and color and super fast to make!  And it’s VEGAN and Gluten-free too! My mother went vegetarian when I was 10 and she rode the veggie train alone in the family.  Granted, mine isn’t the meat-all-week kind of family, Sundays were reserved for a feast with Chicken – usually it was pulao/biriyani, a giant bowl of salad with my dad’s special vinaigrette, chicken curry and raitha.

And it is on Sundays that she felt most alone at the table – so my sweet, sweet father got into the practice of cooking a vegetable side for her. He was an excellent cook, and all he touched in the kitchen turned to delicious gold! This stir-fry was one of them, and  her special favourite.

This Simple Stir-fried Vegetables is very simple, full of flavour and color and super fast to make! Plus it's VEGAN and Gluten-free too!

Despite so few ingredients, it is no slack in flavour – and now that I am largely vegetarian too, this stir-fry has saved me on many a busy day. It’s also a GREAT way to use up odd bits of vegetables that are just too few to make something of by itself.

And whenever I make these, I feel close to my father, like he’s watching over me in the kitchen, and it’s just one more reason for me to keep making this again and again.

Simple Stir-fried Vegetables

  • Prep Time:15m
  • Cook Time:10m
  • Total Time:25m
  • Serves: 2
  • Yield: About 4-5 cups

Ingredients

  • 2 c cauliflower florets, cooked
  • 1/2 c green peas, cooked
  • 3/4 c onions
  • 1 c bell peppers
  • 1 c carrots
  • 1 tbsp. ginger, grated
  • 1 tbsp. garlic, grated
  • 1/2 tsp. fried red chilli flakes
  • 1 tbsp. ketchup
  • 1 tbsp. red chilli sauce
  • 1 tbsp. oil
  • Salt, to taste
  • Cilantro / Spring onion to garnish

Instructions

  1. Heat oil in a pan. Add ginger and garlic and fry until golden brown and crisp.
  2. Add onions, bell peppers and carrots. Sauté for a few minutes along with fried red chilli flakes and salt.
  3. Add the cooked cauliflower and peas. Toss while adding the red chilli sauce and ketchup.
  4. Adjust seasoning and garnish with chopped spring onions or cilantro. Serve hot!

    Aw your dad is the sweetest. And this dish looks amazing. Most of our vegetable side dishes are usually just roasted veggies so this is a welcome change.
