I’ve had the most fun this Halloween, albeit in terms of food – but hey! Isn’t that the best kinda fun? I will also be carving a real-sized pumpkin tomorrow, so woo hoo!!! But despite all that, these Veg Puff mummies are what I’m most excited about!
My husband (who also happens to be the official taste tester at Love is in my tummy) loves Veg puffs and has been hinting for months that I should make them. I must be a very terrible person, because for some reason I haven’t gotten around to making them, until today. And did I mention that I was an Egyptophile growing up?
These must look so fun in a Halloween spread, especially because there’s a mouthful of healthy veggies in every crispy bite! Make the filling with whatever vegetables you want, but potatoes, carrots and peas are the traditional ones.
Making a pastry mummy is a lot more easier than making an actual one. Just divide a puff pastry square in thirds, cut the outer thirds into tiny strips and fold over alternating left and right.
Brush with milk / egg wash to create that golden brown crust as it bakes. Don’t they look perfect?
Bite into your mummies cannibal style! It’s perfectly crispy on the outside and a burst of flavour on the inside.
