Start your day right with this delicious, healthy 1-minute Very Berry Breakfast Crumble with Raisin Bran, flaxseed, berries and nuts!

Let me start off by wishing you a very Happy New Year – the slate is clean, your calendar is reset, the time to come is unwritten and you hold the pen. We are in charge of our own lives – God only helps those who help themselves, and we’ve got to show him we mean business. So my dear friends, charge on!!

I am not a breakfast person – most mornings all I have is a cup of coffee before lunch! Even when my stomach grumbles, I just push the feeling aside and keep working. This year, I’ve resolved to have a healthy breakfast every morning, and how can I not share the goodness with you all???!!!

New Year Resolutions are the strongest during the start of the year, and I am diving straight in with Post® Raisin Bran – loaded with good fiber (23g of Whole Grain  and 8g of fiber per serving!) that is definitely going to keep me filled till lunch! No more grumbling stomachs anymore! And I can’t complain about the raisins either!

If you were like me making excuses for breakfast –

” Oh, I don’t have time, I am running out the door as soon as I wake up!” – all you need for this awesome Very Berry Breakfast crumble is 1 minute!

“Same old cereal, day in and day out” – Nuh uh! It’s like a dessert crumble, but this one you can have for breakfast. Shake things up by adding yogurt for a parfait twist, or milk for a rich, new cereal experience!

Don’t believe me? See for yourself!

Told ya, did’t I? Not a berry fan? Swap with bananas, add a little peanut butter, cocoa powder maybe? Just run with it – you cannot mess this up! Microwave for a minute till the fruits are softened and their natural sugars release,  then top with dairy of your choice and dig in! There’s flaxseed in this recipe – rich in Omega-3, fiber and mucilage (keeps food longer in the small intestines, making for better absorption of nutrients)! And Coconut sugar is something new I’ve been using the last couple of months – it has a lower glycemic index than regular sugar and I haven’t noticed any difference in taste which means I LOVE it!

All in all, this recipe (if I may call it so) will jump start you into a productive morning and sets a good pace for the rest of your day!

Very Berry Breakfast Cereal Crumble

Start your day right with this delicious, healthy 1-minute Very Berry Breakfast Crumble with Raisin Bran, flaxseed, berries and nuts!

  • Cook Time:1m
  • Total Time:2m
  • Serves: 1

Ingredients

  • 1/2 c assorted berries
  • 1 tbsp. coconut sugar (or other refined sugar substitute)
  • 1 tbsp. flaxseed powder
  • 1/2 c Post® Raisin Bran cereal
  • 2 tbsp. chopped nuts

Optional Toppings

  • 2 -3 tbsp Yogurt
  • 1 c milk

Instructions

  1. Place the cereal in a sandwich bag, seal shut and crush with a rolling pin until fairly crumbled.
  2. In a microwave safe mug, add the berries, sugar, flax seed powder, chopped nuts and crushed Raisin Bran cereal.
  3. Microwave for 30sec - 1 minute or until the berries are soft and release their juices.
  4. Remove, top with yogurt (or milk) and enjoy!

    What a creative way to use raisin bran! And I love that you added some flax seed, too — I love that earthy, deep flavor mixed with the sweetness of the berries. Yum!

    What a great breakfast idea. I like to mix it up but keep things healthy. This is a great way to use cereal in a non traditional way. Love the addition of the healthy fruits and nuts. Looks delish!

    This is such a good idea, Tina. I was recently reading that cereal sales have plummeted because the millennials think it’s too much trouble to pour the cereal into the bowl and add milk — and then there’s that whole “clean up” thing. Maybe just sprinkling this on yogurt will be easier for them!
