Transform your weekend with this Black Truffle,Goat Cheese and Red pepper Savory Waffles! Vegetarian. Quick. Simple. Yumm.
I am not a breakfast person. Never have been. But as you know, this year I’ve resolved to eat more breakfasts and do you know the problem with that? As a non-breakfast person, I’m not used to making breakfasts, which means getting into the habit is not the easiest thing.
Breakfast cereals have been working well for me so far, but after a bowl a day every day of the week, on the weekends, I want something ‘more’. It’s the weekend, for crying out loud! But I also want that extra hour of sleep, so you see my conundrum here? Ugh! I’m sure all of you feel the same way too!
I was re-watching Netflix’s Stranger Things last week, so when I was at Walmart during the weekend, all I could think of was ‘Eggos’ (Eggos are the main character’s favourite food). So I took a detour to the breakfast section in the frozen aisle and grabbed as many as I could. I threw in a bunch of Eggo Nutri-grains to balance out the large number of Eggo Chocolatey-chip packs in the cart! See! I’m good!
If you are already a fan, then wait till you hear that Eggo Waffles now have colors and flavors from natural sources!! And you know what? Once toasted, it felt and tasted like it just came out of a waffle iron. My weekends just got a little bit more interesting than they used to be!
So I came back home and made us some amazing Grilled Cheese Waffles for dinner – but not the kind you’re usually used to. I’m on a bit of a Goat Cheese kick lately, so my Grilled cheese Waffles had Goat cheese, Black truffles and Honey! I know, fancy! But isn’t that exactly what all weekends are supposed to be?
And guess what we had for dessert? Yup, the Eggo Chocolatey Chip Waffles drowned in my 5-ingredient 5 minute Vegan Chocolate sauce! Ahh! That was a good day! 🙂
Start your weekend right!
While it is tempting to just throw your frozen waffles into a toaster and call it a day, don’t! With just a little more effort, you can make yourself a meal that’ll put a sunny-side up on your day!
Let’s start you off with my fabulous Goat Cheese and Black Truffle Savory Waffles first:
You can make the topping ahead of time, if you want. So that when you wake up (however late), your awesome breakfast should be ready by the time you’ve brushed and brewed your pot of coffee.
Here are some variations I enjoy:
- Roasting the red peppers before adding it as a topping to the waffle.
- Substituting jalapeno (or something ‘hotter’) instead of the red bell pepper.
- Swap olive oil for honey.
- Make a more ‘regular’ grilled cheese: shredded cheddar, onion, jalapeno, dried Italian seasoning, dry red pepper flakes.
Let’s begin
Come weekend morning (or weekday, whatever!), start by preheating the oven to 450°F/230°C. If you have some tater tots (they go GREAT with this savory breakfast!). Throw some on a baking tray and season with red pepper flakes, a little bit of oil spray (totally optional, though) and put inside the preheated oven for about 10 minutes.
In the meantime, turn on your coffee maker, make yourself a side of scrambled eggs (maybe?) and go brush! Once 10 minutes are up, throw in the frozen waffles next to the tater tots and let it toast for about 5 minutes.
Take out the slightly toasted waffles and smear the black truffle and goat cheese filling on your frozen Eggo Thick and Fluffy Original waffles. If you haven’t chopped and added the black truffle slices to the topping last night, lay it on right now.
Put it back into the oven and turn on the broiler. Let it broil for a couple of minutes, until the cheese is melted and the waffles are nice and crisp. Top with some of those righteous tater tots, maybe a sprinkle of spring onion greens. Enjoy a breakfast, worthy of your weekend mornings!
So the next time you’re in Walmart, be sure to walk by the Breakfast section in the frozen aisle and grab your share of Eggo Thick and Fluffy Original (or choose from a multitude of other flavours).

I love that you baked the Eggos! I think why they haven’t been my favorite in the past. They get to crispy for me (apparently the only I prefer not crunchy!) I have been wanting to try truffles for ages! I bet this is fantastic with the waffles and goat cheese!

Hey Beth! If you are not the crispy kinda gal, then baking it is your best shot. 5 minute bake + 2 minute broil should do it for you.
