Fridays at home are generally designated as ‘Movie Night’ – every other day, we just watch Netflix shows, but on Fridays, we take a break to watch a movie. It’s a whole big ritual, coz my husband and I take turns picking the movie, penalties incurred during the week can be forgiven by letting the other person pick the movie and similarly good behavior gets rewarded just the same, you get the idea!

While popcorn seems to be the most obvious movie night snack, lately, with the weather turning warm, we’ve been wanting something nice and cold instead – like ice-cream. So when we were at Kroger picking up our usual weekly groceries, we wandered down the frozen aisle, wanting to stock up on the cold stuff. Full disclosure, you should know that we went through a terrible terrible ice-cream binge phase last summer, and devoured tub after tub of varying degrees of chocolate until I decided that it was time to stop. We got addicted, withdrawal wasn’t a walk in the park, and neither was the weight gain. Since then, we kinda keep away from the ice-cream aisle, in an attempt at self-preservation and control.

All those memories came crashing down on me as I stood holding the freezer door handle and I knew that it was not a path I wanted to go down again. But it was summer for goodness sake, and I could maybe risk just one teeny-tiny tub. So I decided to look for the ‘healthy stuff’, albeit a bit begrudgingly.

What makes ProYo awesome?

Now if there’s one thing that’s a given in this world, it’s that the healthy stuff never tastes as good as the full-fat, all cream, deep-fried, greasy stuff that generally end up being bad for you.

ProYo High Protein Low Fat Ice Creams proved me so wrong on that count! First off, it’s the packaging that draws you in. All that vibrant color, ugh! I would have picked them just for that. Then there’s a cute story of how the founder decided to make healthy food that actually tastes good. And then the mind-blowing list of what makes this ice-cream better for you than most! It’s high in protein (something we vegetarians/vegans struggle with), low GI, low fat, made with Non-GMO ingredients and rich in prebiotic fibre (probiotics introduce good bacteria into your gut, prebiotic feeds and fertilizes the good bacteria already in your gut). 

We bought their Coconut (smoothie base! hellooooo!) and Blueberry Pomegranate flavors. Now I’m not that crazy on berry flavored ice-creams – I’m a chocoholic and hell would freeze over before I picked any flavor over chocolate, but this time, I did. And OMG! It was delicious! I’m going to get a chocolate next time around, but I’m also turned around on the Blueberry Pomegranate! Oh! Oh! And I checked the label, and even the pink color is made from Beet Juice extract! No artificial colors, all natural! ProYo achieves PERFECTION in a tiny, well-portioned 14oz TUB!

So now, movie nights and any other night we feel like a little ice-cream indulgence, I know I’m going straight to ProYo High Protein Low Fat ice-creams – guilt-free!

Make your Dessert Samosas

I got lucky on the ice-cream front at the store, but I always feel like I must contribute something to every aspect of a meal. So, I wanted to make these dessert samosas, to eat with the ice-cream whenever it caught our fancy. I’d make a large batch, freeze it, and come movie-night, bake just what I need to eat with the ice-cream! Neat, right?

Fruits with a lot of water content (looking at you, melon family!) won’t really work, but you should be able to make something with pretty much the rest. I think mangoes would be super interesting in these dessert samosas! But I didn’t have any at hand, and these right here were all I had.

So I ended up making the following fillings: Apple Pie, Berry Crumble, Raspberry Jam, Banana Toffee and Chocolate. Not bad eh!

And you’ll also need spring roll pastry sheets. Check the freezer section of your local supermarket, but you’ll have better luck in an Asian/Indian grocery. Thaw the frozen pastry according to packaging instructions, and take as many sheets as you’ll need. Seal the rest and re-freeze immediately. Wrap thawed spring roll pastry sheets in a damp kitchen towel as you work.

Cut each sheet in thirds.

Make sure you get your fillings ready. I did an assortment of Apple Pie, Banana Toffee, Berry Crumble, Raspberry Chilli Jam and Classic Chocolate flavors. Don’t worry, it’s not as complicated as it sounds!

Set up the table and get comfortable, there’s a lot of folding to do. Tune in to your favorite TV show – I popped in one of the FRIENDS DVD for this…. it was the season where Rachel has a baby.

If you’ve never folded pastry into a triangle, this should help. It’s really simple! Seal the ends with a cornflour slurry. Put each kind in a different box/freezer bag and freeze until ready to use. Don’t forget to label them!

When you’re in the mood for some dessert, bake them in a preheated oven (or deep-fry) till crisp.

Dessert Samosas

  • Yield: 42 assorted samosas

Ingredients

For the Samosas

  • 14 sheets of spring roll pastry
  • 1 tsp. water
  • 2 tbsp. cornflour/cornstarch

Apple Pie filling

  • 3/4 c chopped apples
  • 1/8 tsp. cinnamon powder
  • 1 tsp. sugar (to taste)
  • a drop of lemon juice

Raspberry Jam filling

  • 1/4 c + 2tbsp raspberry jam, melted (recipe link in post)

Banana Toffee filling

  • 1/2 c bananas
  • 1 tsp. VEGAN butter/oil
  • Sugar, to taste

Berry Crumble filling

  • 1/2 c blueberries
  • 1/2 c raspberries
  • 1 tsp. sugar (to taste)
  • 1/2 tsp. VEGAN butter / oil
  • 2 tbsp. almond flour

Chocolate filling

  • 1/4 c chocolate chips

Instructions

  1. Thaw the frozen spring roll pastry according to package instructions. Take the sheets you need, cover in a damp cloth. Refreeze the rest immediately.

Make the apple pie filling

  1. Combine all the ingredients (chopped apples, sugar, lemon juice, cinnamon powder) in a small pan, and let it cook and soften over medium heat. Once the apples are cooked and all the juices evaporated, remove from heat and let cool completely. Set aside.

Make the Banana Toffee filling

  1. Melt some butter in a large sauce pan and swivel the pan to coat evenly. Arrange the banana slices on the pan in a single layer and sprinkle sugar on top. When the bottom has turned golden brown, flip and cook the other side. Remove from heat and let cool completely. Set aside.

Make the berry crumble filling

  1. In a small saucepan, combine the berries, sugar and butter and cook until the berries burst and release juices. Add the almond flour and continue cooking until reduced and thickened. Remove from heat and let cool completely. Set aside.

Prep the Raspberry jam

  1. If using refrigerated raspberry jam, microwave for 10-20 seconds until it comes back to a spreadable consistency.

Assemble the samosas

  1. Stack the thawed pastry sheets and cut in thirds. Cover with a damp cloth to prevent the sheets from drying out as you work piece by piece. Dissolve the corn starch and water to make a paste.
  2. Taking one sheet at a time, place a little filling on one end and fold into a triangle. Seal the end using a little cornstarch paste. Repeat until you run out of filling/pastry sheets or both.
  3. This recipe should make about 6 Apple Pie | 12 Raspberry | 6 Banana Toffee | 13 Berry Crumble | 5 Chocolate Samosas.

Freeze for later

  1. Store the samosas in either in freezer friendly storage bags or boxes. Don't forget to label the boxes/bags with the samosa flavours.

Fry

  1. Heat some oil in a small pan for deep-frying. Once the oil is hot, deep-fry the samosas until golden brown on both sides. If some filling should leak out during frying, scoop it out immediately, before it burns and turns the oil bitter.
  2. If using frozen samosas,DO NOT THAW! They should go straight from the freezer into hot oil directly.
  3. Drain on paper towels and serve warm.

BAKE!

  1. Preheat oven to 425°F/220°C. Line a medium baking tray with foil/silicone baking mat.
  2. Arrange the frozen/freshly wrapped samosas in a single layer spaced apart.
  3. Bake in the preheated oven at 425°F/220°C for 10-12 minutes. Transfer to a wire rack to cool slightly before serving warm.

    I am so happy to see this new ice cream! I have been down that road of late night ice cream eating and I’ve been steering away from it as well…but it’s so tempting! The little samosas are the cutest!
