I’m sure that you lot are painfully aware of the fact that I have never been a breakfast person, and even though I made a resolution to change that this year, I regret to inform you that I fell off the wagon within the first couple of months. Honestly, it was easier going vegan than it was keeping up a regular breakfast schedule.

The last few weeks have been absolute mayhem, and I’ve been juggling one too many projects to fake sanity. If you missed my post on FB and Insta earlier this week, here’s me officially announcing that my life long dream of being published in print is being fulfilled next month, and you can see my work in the second issue of  The Supper Club magazine. I’ve written a heartfelt piece about ‘Fall, Food and Finding Home’, along with an exclusive recipe for Fall-inspired Sweet Potato and Corn Samosas. I couldn’t have picked a better first, as this magazine epitomizes all the things I love about food. It is a celebration of global cuisine, cultures, personal stories and memories that revolve around the kitchen.

There’s also a Fall Outdoor Shoot that I’ve been working on for a long time, putting together every single detail with care, planning every second of it with diligence. It’s happening next weekend, and as the day draws close, the anticipation and excitement are being cruelly drowned in an endless wave of pessimistic terrors. All of this has me generally sapped of time and energy in equal parts, and that’s why you haven’t been seeing me post thrice a week as I used to. I truly apologize for that, but know that with every delay comes something bigger and better to make up for the lost time. I promise!

This Vegan Breakfast Pizza Toast has been in my life for quite sometime now; in fact, I’ve been having these about thrice a week this month, and it’s been tiding me over till lunch, which is usually late in the afternoon, and pitiful some days, runs into the evening. And I thought that it was about time I shared it with you.

I am a savory breakfast person, which is probably why morning cereals have never appealed to me since moving to the States. Paired with my love of a good loaf of sourdough bread, fitting these Vegan Breakfast Pizza Toasts into my life hasn’t been that difficult. Not to mention that there’s no particular recipe to follow.

I just melt a tiny blob of Vegan butter on a hot skillet, and swivel the pan till it coats the base. Then I plop a slice of bread that’s been smeared in a little of my special Spicy Marinara, topped with colored bell peppers, a decent heaping of Vegan Mozzarella and finished off with a generous sprinkle of Italian herb seasoning. The trick to the most delicious bite, is to toast the bread on slow heat, covered. While the pan patiently sears the bottom in a brilliantly crisp shade of golden brown, the covered dome melts the cheese on top, delivering the ultimate killer ratio of crisp to gooey. This fits into my morning schedule quite nicely too: I put the bread on the pan while I make my coffee. While the coffee drips, and the bread sears, I amble into the bathroom and do morning things. By the time I’m done, the toast is ready and my coffee is just perfectly warm to be enjoyed without any danger of scalding.

This may just turn me into a morning breakfast person. We’ll see.

Vegan Breakfast Pizza Toast

  • Serves: 1
  • Yield: 1 slice of pizza toast

Ingredients

  • 1 slice of sourdough bread
  • 1/2 tsp. dairy-free Butter (I used Earth Balance)
  • 1 tbsp. spicy marinara (link to recipe in post)
  • 1/4 c sliced sweet/bell peppers, deseeded
  • 1/4 c shredded dairy-free mozzarella (I used Daiya)
  • 1/4 tsp. Italian seasoning

Instructions

  1. Spread the marinara on one side of the slice of sourdough. Top with the sliced peppers, then the shredded mozzarella. Sprinkle the Italian seasoning on top.
  2. Heat a skillet over medium heat. Melt the butter and swivel till it coats the base.
  3. Add the prepared sourdough to the pan (loaded side facing up) , cover and cook on medium-low heat for about 4-5 mins till the bottom is golden brown and the cheese is melted on top.
  4. Remove from heat and serve hot!

    Hi – i’m not a breakfast person either and it is something i constantly struggle with so I commend you for taking on the task. While your breakfast pizza looks delicious – though i’m actually thinking lunch or dinner 🙂 – i wonder about the protein content or lack there of. I have always been told protein is important in terms of making one feel full and getting the day started well but the pizza doesn’t seem to have much. Am i missing it somewhere? In the meantime, I think this will perhaps be sitting near some soup tonight for dinner.

      I completely understand your concerns, and as a vegan, protein is always a bit of a taboo. Thankfully, I eat a lot of lentils and vegetables to make up for that, and as to feeling full, fiber is the main player. You need fiber to feel fuller. And if you can find a good sourdough made with whole grains, you’re all set on that. And I’ve been eating just one slice of this Pizza toast, and it carries me happily till lunch. Make it a little different each day: add more vegetables (instead of just peppers), maybe some spinach, beans, herbs, etc and it would be great! With the marinara (rich in tomatoes – antioxidant, vitamin, minerals, + more …), it’s a much more nutritious start to a day, as opposed to say, just plain bread and butter. I hope that helps!

        that does help and that is a good reminder to remember the fiber piece of the equation as well. I think as i have shifted to being vegetarian to vegan, the protein issue is one i have been struggling/mindful of. I can’t say that i am doing as well in terms of legumes as you are but i am making progress in that direction. I’m not giving up hope on becoming a better breakfast eater and will use you and your toast as an example of what is possible. Thanks.

    I’m not a lover of breakfast dishes very often, so sometimes I eat leftovers but this looks like a breakfast I can eat every day.
