Ingredients
- 1 c all-purpose flour + 2 tbsp for kneading
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. red chilli powder (substitute with paprika)
- 3 tbsp. cold butter, chopped
- 1/2 c (packed) grated cheddar cheese (reduced fat)
- 1/3 c skimmed milk
- 2 -4 tbsp sesame seeds (optional)
Instructions
- In a large bowl, combine the flour, baking powder, salt and red chilli powder.
- To it, add cold butter and grated cheese and with your finger tips, rub the flour against the butter until you get a grainy, sand-like flour mixture.
- Add a little milk at a time to the flour and form a dough.
- On a lightly floured surface, knead the dough till it forms a smooth ball.
- Divide the dough into two. Set one half aside.
- Preheat the oven to 425°F / 220°C. Line 2 large baking trays with parchment paper.
- Roll one half into a 1/4\" thick sheet. Use cookie cutters to cut into the dough. Or simply cut long strips using a knife.
- Lay the pieces on the tray and sprinkle with sesame seeds.
- Bake at 425°F / 220°C for 6 minutes. Let it cool in the oven for 10 minutes.
- Then transfer to a wire rack to cool completely.
- Store in an air-tight container for upto 2 weeks.
