Ingredients
- 150 g sweet potato flesh (cooked, peeled and chopped)
- 2 tbsp. flaxseed powder + 4 tbsp water
- 1 c canned coconut milk
- 1 c water
- 3 tbsp. cocoa powder
- 2 c oats flour
- 4 tbsp. coconut sugar (or regular sugar)
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. vanilla bean paste
- Oil, for greasing
Instructions
- Mix the flaxseed powder with water and let sit for 15 minutes, till it gets soft and egg-white like.
- In a large blender, combine all the ingredients : cooked sweet potatoes, hydrated flaxseed flour, coconut milk, water, cocoa powder, oats flour, coconut sugar, baking soda, baking powder and vanilla.
- Blend until you get a smooth batter.
- Heat your waffle iron according to manufacturer's instruction and ladle about 3/4 c of batter into the preheated waffle iron.
- Cook according to manufacturer's instruction - I set it at crispness level 4.
- Serve hot topped with syrup and fruits.
