Ingredients

  • 1 cup roasted peanuts (unsalted, skinned)
  • 0.5 cup chickpea flour (besan/gram flour)
  • 3 tbsp rice flour
  • 2 tsp red chilli powder
  • a pinch of turmeric powder
  • 0.25 tsp baking soda
  • 3 -4 curry leaves, chopped
  • 1 clove garlic + 1/2 tsp garlic powder
  • Salt to taste
  • 2 tsp oil + more to spray/brush
  • 8 tsp water

Method

  1. Preheat oven to 425°F/220°C. Line a medium baking tray with parchment paper/silpat mat.
  2. Combine the peanuts with all the dry ingredients in a bowl.
  3. Add oil and water, one teaspoon at a time and combine with a fork until the batter clumps together around the peanuts.
  4. Transfer to the prepared baking tray and use the fork to break the clumps up and spread it as evenly as you can. Spray/brush with more oil.
  5. Bake in the preheated oven at 425°F/220°C for 15 minutes. After about 10 minutes, and break up more clumps as you stir.
  6. Turn off oven and open the oven door slightly ajar and let cool completely on the tray in the warm oven (it will continue to get crisp as it cools).
  7. Store in an airtight container for 2 weeks.
