Total Time 47 minutes mins
Servings: 4
Ingredients Method

Ingredients

  • 1 cup all-purpose flour + 2 tbsp for kneading
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 2 tsp red chilli powder (substitute with paprika)
  • 3 tbsp cold butter, chopped
  • 0.5 cup (packed) grated cheddar cheese (reduced fat)
  • 0.33333333333333 cup skimmed milk
  • 2 -4 tbsp sesame seeds (optional)

Method

  1. In a large bowl, combine the flour, baking powder, salt and red chilli powder.
  2. To it, add cold butter and grated cheese and with your finger tips, rub the flour against the butter until you get a grainy, sand-like flour mixture.
  3. Add a little milk at a time to the flour and form a dough.
  4. On a lightly floured surface, knead the dough till it forms a smooth ball.
  5. Divide the dough into two. Set one half aside.
  6. Preheat the oven to 425°F / 220°C. Line 2 large baking trays with parchment paper.
  7. Roll one half into a 1/4" thick sheet. Use cookie cutters to cut into the dough. Or simply cut long strips using a knife.
  8. Lay the pieces on the tray and sprinkle with sesame seeds.
  9. Bake at 425°F / 220°C for 6 minutes. Let it cool in the oven for 10 minutes.
  10. Then transfer to a wire rack to cool completely.
  11. Store in an air-tight container for upto 2 weeks.
